Rainbow Broccoli Salad for Fertility

If you are TTC and need some inspiration, try this salad.

It’s one of my favourites from my Fabulously Fertile Cookbook – Real Food To Boost Your Fertility.

Soy-Free Dairy-free, Gluten-free, Egg-free, Corn-free, Processed Sugar-free

This dish is a treat for your taste buds. The sweetness of the cranberries and the crunch of the pistachios will have you cravings more. It seems to taste even better the next day! If you have problems with your thyroid no need to worry the broccoli has been lightly cooked.

Rainbow Broccoli Salad

yield: 4-6 servings

prep: 15 minutes cook:

5 minutes

1⁄4 cup extra virgin olive oil
1⁄4 cup grade b maple syrup
1⁄4 cup + 2 Tbsp lime juice (approximately 3 ripe limes)
sea salt, to taste
1⁄2 tsp coarse black pepper
1 head broccoli, cut into uniform florets, stem cut into uniform slices

1 red pepper, small dice
1 yellow pepper, small dice
1 apple, core removed, small dice
1 cup dried cranberries
1 1⁄2 cups shelled pistachio
1 cup raw sunflower seeds

Directions

  • Whisk oil, maple syrup, lime, salt, and pepper in a small bowl and place in refrigerator until ready to use.
  • Set aside a medium mixing bowl with ice water.
  • Bring a large pot of water to a boil. Toss in as much broccoli as will fit in a single layer. Let cook for 1 minute.  Using a spider or slotted spoon, remove from water and place directly in ice water.  Let stand for 20 seconds and strain.
  • Repeat steps until all broccoli has been blanched, shocked and strained of excess water.
  • Set broccoli in food processor bowl and pulse until bite-size, shredded pieces are formed.
  • In a bowl, toss with peppers, apple, cranberries, and dressing.
  • Immediately before serving, toss with pistachio and sunflower seeds.
